This was a TV special in three parts about the
Making of Princess Mononoke of
the animation master Hayao Miyazaki. In the third and last part,
there are about 3 minutes with composer Joe Hisaishi.
I saw it on Japanese TV cable, but probably it is included as
Special Features in some of the movie releases.
In the program, it is mentioned that the footage video was taken
from a session on May 17th, 1997 at Abaco Creative Staff (Waseda)
with the Tokyo City Philharmonic Orchestra, with conductor
Kumada Hiroshi (I hope I got the name right).
